Brownies without eggs, butter, sugar and flour. Do you think this is impossible? Prepare to be amazed - you can make a delicious chocolate dessert with ... regular beans! It will give the texture you need, but you won't taste it in the finished brownie. We will use ground flaxseed as a "fastening" element. And for more "chocolate", in addition to cocoa, add pieces of dark chocolate to the squares.

Another important ingredient is nuts, which, by the way, do not have to be walnuts, they can be replaced, for example, with almonds. And if you want to get a more uniform and smooth texture, then replace them with ready-made almond flour or simply grind as much as possible in a blender or coffee grinder.

The best part is that you can afford these chocolate squares during fasting and even treat them to friends who have completely excluded animal food from their diet. For the latter, it is enough to add any other sweetener instead of honey - for example, maple syrup, Jerusalem artichoke or agave syrup. The sweetness of the dessert can be adjusted to your liking during the dough preparation phase.

And as part of this master class, we will learn how to cook nut milk, which is useful for creating chocolate icing and will definitely not interfere with fasting - it can be added to, cooked on its basis, cereals, smoothies and hot chocolate.

Ingredients:

  • 3 tbsp ground flaxseed
  • 250 g red boiled beans
  • 100 g walnuts
  • 4 tablespoons honey
  • 5 tbsp cocoa
  • 1 tsp soda
  • 1 tsp baking powder

Preparation:

Pre-soak the nuts overnight.

Pour the ground flax seeds with water so that it completely covers them. Leave on for 10 minutes.

Rinse the nuts, pour 400 ml of water. Beat in a blender until the water turns white and the nuts are crushed.

Strain the resulting nut milk through cheesecloth - it will be useful for making the glaze.

Mix nut cake in a blender with beans, thickened flax, 3 tbsp. honey, 2 tablespoons cocoa, soda and baking powder. Beat until smooth.

Stir the dough and place in a parchment-lined dish.

Bake in an oven preheated to 180 ° C for 20-30 minutes until dry with a toothpick.

For the glaze, mix 3 tbsp. cocoa, 1 tbsp. honey and 2 tbsp. nut milk. If the icing is very thick, add more nut milk.

American brownie cakes are probably made by many, or at least have heard about them. These delicious chocolate squares are found in America at every turn, as we used to sell jam pies.

Brownies derive their name from the word "brown", because they have a rich chocolate color (and taste!), And in addition to chocolate and cocoa they contain butter, eggs and sugar.

Is it possible to cook brownies during Lent without all the prohibited foods, but retaining the basic qualities of brownies: chocolate flavor, softness, slightly moist juicy texture in the middle? It turns out you can!

Last year, Elena Chekalova, the host of the culinary section in the morning program of the First Channel of Russian television, spoke about this.

Ingredients (for 2 servings): 2 tbsp flour, 3 tbsp. cocoa, 2 tablespoons sugar, 3 tbsp. walnuts (chopped), 12 tbsp. baby applesauce, a pinch of salt and soda.

Walnuts must be coarsely chopped. We need one and a half tablespoons per serving, but, as you know, nuts are not superfluous, so a little more is possible.

These brownies are baked in the microwave, it is most convenient to do this in silicone molds. The author had cups, and I decided to give the brownies a traditional square shape, so I used a portioned silicone cupcake tray.

Usually, silicone molds are not greased, but this procedure will not interfere with the microwave. Pour a little nuts at the bottom, leave the rest of the nuts for the dough.

We mix all dry ingredients: flour, cocoa, sugar, salt and soda. We put salt and soda a little at a time, as they used to say - on the tip of a knife. It is not necessary to extinguish soda, since there is acid in the puree. Sugar, sweet tooth for my taste, is not enough, I added myself when re-baking.

We add baby food - applesauce, slightly diluted with water. I think that if the puree comes from any other fruit, the brownie will not hurt.

The dough should turn out like thick sour cream, if necessary, you can add a little more water by eye. At the end, add the remaining nuts and stir.

We transfer the dough into molds. I got full forms, but for lifting, you still need to leave a place so that the dough does not run over the edge.

We set the time experimentally. It was baked after 4 minutes, but I turned it on first for 2 minutes, looked, then put it on for a couple of minutes, because the power of the microwaves is different. Finished brownies should be bouncy and not sticky to your fingers.

We cut the brownie into squares - and serve with tea or coffee. The taste is chocolate, the texture is soft, the nuts crunch appetizingly. In general, it is very suitable for express baking!

The Lean Brownie recipe is similar to another American dessert that initially excludes animal products, but not because of prohibitions, but because of economy.


Ingredients for a lean brownie:

  • 2 tbsp. flour (1 glass - 250 ml.)
  • 1.5 - 2 tbsp. sugar (2 tablespoons - for true sweet tooth! If you are cooking for the first time, put in the minimum or medium portion of sugar so as not to oversweeten.)
  • 1/2 tbsp. cocoa powder
  • 1 tsp baking powder (can be replaced with 1 teaspoon of baking soda and 1 tablespoon of lemon juice)
  • 1 tsp salt
  • 1 tbsp. (or any vegetable milk: sesame, soy, almond, or 1 cup of drinking water + 1 tsp of vegetable oil)
  • 1 bar of dark chocolate (check the label to make sure chocolate excludes animal products)
  • 1/4 tbsp. olive oil or other oil without a pronounced taste
  • 1 tbsp. l. vanilla sugar

Lenten brownie cake in the oven

To bake a vegan brownie in the oven, we need a 9 x 13 pan. Turn the oven on to heat up to 220C. In the meantime, tackle the chocolate cake batter.

  1. In a separate deep bowl, combine dry ingredients: wheat flour, sugar, cocoa, baking powder and salt. There is no need to add vanilla sugar.
  2. Grate a bar of chocolate on a fine grater or grind into flakes in a blender.
  3. Heat coconut milk (or water) over low heat, but do not let the milk boil. Remove from heat, add chocolate chips, vanilla sugar and vegetable oil and stir thoroughly.
  4. Combine wet and dry ingredients together and mix well to make sure you get a smooth paste.
  5. The dough should be thick, pasty. Spread it evenly over the baking dish. And then put in the oven to bake until tender, about 25-30 minutes.

You can check the chocolate cake for readiness with a wooden stick or toothpick. Insert a toothpick into the center of the brownie, stick it deeper. If the dough doesn't stick, the veggie brownie is ready! It can be taken out of the oven and set to cool.

And of course, brownies can be prepared every time with a different taste: with nuts, prunes, bananas, oranges, citrus zest, cherries, and so on.

Lenten Chocolate Pie is a lean chocolate brownie, completely lean (I apologize for the repeated repetition of the word - lean, but you can't throw out the words from the song :)), does not contain eggs, butter and dairy products! For me, a passionate lover and adorer of brownies, this wet chocolate cake, which has gained great popularity among sweet tooths all over the world, it seemed completely unrealistic to make brownies without eggs and butter. But - Dreams Come True! Delicious, flavorful, moist, chocolate cake - catch a recipe that works for observers, vegetarians, and vegans, but not limited to. A wonderful, rather economical baking recipe will come in handy when there seems to be no food in the house, but you want something tasty. In a week and a half, I baked this cake four times, experimenting with food rates and baking times. The last, fourth, the one in the photo, turned out to be the most delicious of all, but this is just for my taste, the family liked all four. Although ... The husband sighs, hinting that it's time to bake a classic brownie.

I want to immediately dispel your expectations that the lean chocolate cake will taste identical to regular brownies, which include eggs and butter, for example. Of course not, since these products are not in it, the taste will be different. But - not for the worse. There just should always be an alternative, for all occasions. Choice, and cooking too. Now I have an egg-free brownie recipe and am very happy to be able to delight my little vegetarian with chocolate baked goods.

Composition

  • 2 tbsp.
  • 1.5 tbsp.
  • ¾ Art.
  • ½ tsp baking soda
  • 1 tsp salt
  • 200 ml
  • 1 tbsp. water
  • vanillin, or vanilla sugar

Lean Chocolate Pie - Step by Step Recipe

1. Flour, sugar, cocoa, vanillin, salt and soda - mix.

2. Add oil and water and knead the dough with a spatula. You can add nuts and dried fruits.

3. Cover the mold with parchment and pour out the dough.

4. Heat the oven and set the brownie to bake at + 180s. Baking time from 30 minutes to 35. After half an hour of baking, the cake turns out to be very moist, and after 35 minutes, as in the photo. They are both delicious, the baking time depends on your preference, how you like. If you want a brownie-like stringy, then the baking time is shorter. And if you like well-baked pastries like dry biscuits, bake longer.

First of all, we will brew strong coffee and while it cools down, we will prepare the dough.
To prepare brownies, rinse the prunes well and grind them in a blender, adding 100 ml of water. Grind until puree.
Any nuts will do - your favorites.
I have peanuts, which I dried in a dry frying pan. Rubbing a little with a napkin, easily peeled it off.
Grind the nuts in a blender, but not very finely. I like to feel the nuts in baking - they hit the teeth.

Mix the sifted flour with baking powder, sugar and cocoa.
We also send prune puree and chopped nuts here.

Stirring the mass, add a little coffee to get a homogeneous mass.

Cover the baking sheet with parchment paper and grease with vegetable oil.
Pour the dough onto a baking sheet and level the surface so that the baked goods are baked evenly.
Preheat the oven to 180 degrees, and bake the brownies for 30 minutes.

Readiness, check with a wooden skewer or a match. If the surface of the skewer is dry, you can take it out.

Let the brownie cool and cut into small squares with a sharp knife.
Decorate with a berry, sprinkle with powdered sugar if desired.
