Cooking method:

First, we prepare the necessary ingredients, wash the bacon, dry it and rub it with salt and garlic. Then put it in the refrigerator for 12 hours.


You can use any meat you like. In this case, it was veal. It needs to be rinsed, dried and cut into small, thin slices. We put it in a cup, put in one tablespoon of salt and sugar, and of course add a little pepper. Plus, we pour in vodka, and if you have a desire, you can add some more spices, well, that's at your discretion.


We dry the bacon properly so that there is no excess moisture. And at this time, cut the meat into smaller pieces and scroll it in a meat grinder.


Put lard in the freezer for 20 minutes to solidify. Then we take out and cut into small squares. It is not advisable to twist, otherwise the meat will turn out to be very fatty.


It's time to combine all the ingredients together and add the remaining salt and sugar. We also pour in cognac, if it is not there, then you can vodka and mix the minced meat thoroughly with your hands.

Now we will begin to form the sausages, but before that we need to rinse the intestines well, and after that we fill them neatly with meat.

Suddenly you do not have guts at hand, do not be discouraged, in this case they can be replaced with ordinary gauze. We just wrap the sausages in it.

Pork basturma at home


Unfortunately, not everyone can afford to buy such a delicacy, so I want to offer you a recipe for how to make pork basturma at home. It turns out not at all worse than the one sold in the store, but the most important thing is that you can be 100% sure of its quality.

Ingredients:

  • Pork neck - 2 kg
  • flour - 1 tbsp. spoon
  • garlic - 2 heads
  • fenugreek - 80 gr
  • ground red pepper - 1 tbsp. spoon
  • paprika - 1 tbsp. spoon
  • salt - 1 tbsp. l.

Cooking method:

We wash the meat under cold water, cut it lengthwise, into two equal parts, sprinkle it well with salt, transfer it to a container with a tight vacuum lid and put it in the refrigerator for 24 hours.

After one day, we take the meat out of the refrigerator, rinse it and hang it in a ventilated dry room for four days.


We combine all the necessary spices with flour, squeeze the garlic through a press and dilute with boiled cooled water so that a thickish sauce is obtained. We cover and put it in the refrigerator overnight.


After 48 hours, remove the pork and dip in the prepared sauce, then take it out, place it in a vacuum container, and put it in the refrigerator for four days.



After these 48 hours, we take the meat out of the refrigerator, remove the sauce and hang it for another 24 hours to dry.


That's all, basturma is ready at home. Eat to your health!

Chicken legs in dough


Mostly chicken legs are cooked in puff pastry. Now I will offer you a not so common recipe - legs cooked in yeast dough. This is also very tasty.

Ingredients:

  • Chicken legs - 5 pcs
  • flour - 4 cups
  • dry yeast - 2.5 tsp
  • water - 350 gr
  • sugar - 3 tbsp. spoons
  • vegetable oil - 5 tbsp. spoons
  • champignons - 300 gr
  • onions - 2 pieces
  • salt - 2 tsp.

Cooking method:

1. We start the dough and for this we need to dissolve yeast, sugar and 1 teaspoon of salt in warm water.

Pour in 3 tablespoons of vegetable oil and add the sifted flour. Knead the dough and leave in a warm place for one hour.

2. Boil the chicken legs for 15-20 minutes, salt and add all the spices, then fry until golden brown.

3. Peel the mushrooms and onions, cut them into small pieces and fry in oil over medium heat until tender.

4. In the meantime, the dough has become ready, knead it a little and divide it into 5 even parts, and from each part we make a cake, in the center of which we put one leg and some fried mushrooms with onions.

5. Collect the dough around the leg, connect it, leave only the bone open, in the same place you can tie it with a stem of dill or parsley.

6. Grease the dough with butter and send it to a preheated oven up to 200 degrees for 20-25 minutes.

7. The dough has acquired a pleasant golden color, which means it can be removed from the oven. The legs are ready.

Preparation:

You will need:

  • 2 eggs,
  • 0.5 pod of red sweet pepper,
  • 6 processed cheese curds,
  • 1 clove of garlic
  • 50 g peeled shrimp,
  • 50 g of any greens,
  • 2 pickled cucumbers
  • 100 g canned olives,
  • 1 loaf of wheat bread
  • 100 g mayonnaise
  • a few cherry tomatoes,
  • salt, ground black pepper.

Preparation:

  • Boil the egg hard-boiled, let cool and peel, finely chop. Finely chop the pulp of sweet pepper. Mash the processed cheese with a fork. Peel the garlic and pass through a press.
  • Boil the shrimps in boiling salted water, let cool and chop finely. Chop the greens, finely chop the pickled cucumbers. Cut each olive in half.
  • Cut wheat bread into small slices (squares or curly) and dry in a cool oven.
  • Mix the processed cheese with eggs and divide the resulting mass into 4 parts. Mix the first with garlic and mayonnaise, the second with bell peppers and mayonnaise, the third with shrimp and mayonnaise, and the fourth with herbs, cucumbers and mayonnaise. Put the resulting fillings on the bread and flatten. Garnish with cherry halves and vegetable slices.

3. Fried suluguni with tomatoes

You will need:

  • 500 g of suluguni cheese,
  • 2 eggs,
  • 100 g bread crumbs
  • vegetable oil for frying,
  • 2 tomatoes,
  • 1 clove of garlic
  • 70 g cilantro,
  • 2 tbsp. a spoonful of vegetable oil
  • salt, ground black pepper.

Preparation:

  1. Cut the suluguni into thick slices. Beat eggs lightly. Dip each slice of cheese in eggs, roll in breadcrumbs. Repeat this procedure one more time and fry in vegetable oil.
  2. For the sauce: Wash the tomatoes, dry and cut into cubes. Pass the garlic through a press, chop the cilantro. Mix all ingredients with butter, salt and pepper. Serve separately with fried suluguni.

  • 100 g butter
  • 1 clove of garlic
  • 70 g of any greens,
  • 1 pod of red bell pepper
  • 200 g of cottage cheese,
  • 100 g grated cheese
  • 2 sheets of thin pita bread
  • salt, ground black pepper.

Preparation:

  1. Dissolve the butter. Pass the garlic through a press, chop the herbs, chop the bell peppers into small cubes. Rub the curd through a sieve and mix with butter, all prepared ingredients and grated cheese. Season with salt and pepper.
  2. Distribute the resulting filling over the sheets of pita bread and roll them up. Wrap in plastic and refrigerate for 2 hours. Slice before serving.

You will need:

  • 1 small piece of chicken fillet
  • 4 large meaty tomatoes,
  • 2 fresh small cucumbers,
  • 2 cloves of garlic
  • 100 g of shelled walnuts,
  • 2 tbsp. chopped cilantro spoons,
  • 2 tbsp. spoons of light mayonnaise,
  • 0.5 teaspoon of ground paprika,
  • salt, ground black pepper.

Preparation:

  1. Wash the chicken fillet, cut in half, cover with hot water and cook for 40 minutes. Let cool and chop finely.
  2. Wash cucumbers, dry, cut off the ends, cut the pulp into small cubes. Pass the garlic through a press. Grind the nuts in a blender.
  3. Combine all prepared ingredients with chicken, cilantro and mayonnaise, salt and pepper, sprinkle with ground paprika.
  4. Wash the tomatoes and pat dry well with a paper towel. Cut into rings and spread over a large platter. Put the resulting filling on each circle, garnish, if desired, with cilantro sprigs and serve immediately.

6. Snack "Christmas trees"

You will need:

  • 200 g of crab meat,
  • 2 boiled eggs
  • 130 g cheese
  • 1 clove of garlic
  • 75 g mayonnaise,
  • salt to taste.
For decoration
  • 100 g salted crackers
  • 3 frillis lettuce leaves,
  • 2 bunches of dill
  • 1 boiled protein
  • pomegranate seeds.

Preparation:

  1. Defrost the package with crab meat. Grate the meat on a medium grater. Grate eggs and cheese on a fine grater. Peel and crush the garlic. Combine the ingredients for the salad, salt and mix.
  2. Roll 3 balls from the mass: form a cake from the first to the diameter of the cracker; from the second - a slightly smaller cake; from the third, a small cone.
  3. Put the salad in the shape of the Christmas trees on the cracker: a large tortilla - medium - in the form of a cone. Sprinkle the “Christmas trees” with chopped dill and garnish with pomegranate seeds.

You will need:

  • 0.5 pod of red chili pepper,
  • 150 g cream cheese
  • 70 g sour cream 30% fat,
  • 1 tbsp. tablespoons of butter
  • 100 g lightly salted red fish,
  • 150 g feta cheese,
  • 12 puff tartlets.
for pesto sauce:
  • 50 g parmesan (or other hard cheese),
  • 3 tbsp. spoons of pine nuts,
  • 20 g green basil leaves
  • 1 clove of garlic
  • 4 tbsp. tablespoons of olive oil.

Preparation:

  1. For the first filling, chop the chili pepper very finely. Combine cream cheese with sour cream and butter, mix with chili. Cut the fish into thin slices.
  2. For the pesto sauce, shave the Parmesan. Brown the nuts in a frying pan without oil. Wash and dry the basil. Peel the garlic and pass through a press. Grind the prepared ingredients in a blender, then gradually add olive oil and whisk everything.
  3. Cut the feta cheese into cubes.
  4. Fill the tartlets with the cheese filling and pesto sauce, place the fish nicely on top of the cheese filling, feta cheese cubes on the pesto and refrigerate for 20 minutes. Garnish with green leaves before serving.

You will need:

  • 4 sprigs of dill,
  • 5 eggs,
  • 3 tbsp. tablespoons of cream 10% fat,
  • 150 g lightly salted red fish,
  • 1 avocado
  • 1 tbsp. a spoonful of lemon juice
  • 150 g ricotta cheese
  • 100 g red caviar,
  • salt,
  • ground black pepper.

Preparation:

  1. Wash the dill sprigs, dry well with a paper towel and chop. Beat eggs with a whisk with cream, add chopped dill, salt and pepper a little. From the resulting mixture, bake a few thin omelet pancakes and let them cool well.
  2. For the filling, cut the red fish into small cubes. Wash, peel and cut the avocado in half. Remove the bone, cut the pulp into thin slices. Drizzle with lemon juice.
  3. Mix ricotta cheese with fish and avocado, pepper a little. Cover each pancake-omelet with the prepared filling and smooth (leave 4 tablespoons of the filling for decoration). Roll gently and then cut into large slices. Spread some filling on top and garnish with red caviar.

9. New Year's snack

You will need:

  • 200 g lightly salted salmon,
  • 1 cucumber,
  • 100 g of curd cheese,
  • 1 teaspoon of canned horseradish,
  • zest of 1 lemon,
  • 4 sprigs of dill,
  • 70 g red caviar,
  • salt, ground black pepper.

Preparation:

  1. Cut the salmon into very thin slices. Wash the cucumber, peel, remove the seeds, cut the pulp into thin long slices.
  2. Stir the cheese with horseradish and lemon zest. Season with salt and pepper to taste. Wash the dill sprigs and dry well. Divide into small twigs.
  3. Spread the salmon slices with curd cheese and roll them up. Place vertically on a plate, cut up. Stick in a slice of cucumber (1-2), a sprig of dill and garnish with caviar.

You will need:

For rolls:
  • 3 eggplants,
  • 200 g of fish (preferably river),
  • 3 tomatoes,
  • salt, ground black pepper,
  • 4 tbsp. tablespoons of olive oil
  • lemon juice,
  • lettuce leaves.
For the garlic sauce:
  • 4 cloves of garlic
  • 150 g mayonnaise
  • ground black pepper,

Preparation:

  1. Prepare the fish. Wash, cut and separate the meat from the bones. Remove small bones with tweezers, pulling fillet pieces over the edge of the bowl (this way they are better visible). Then cut the fillets into small pieces and drizzle with lemon juice.
  2. Heat 2 tbsp in a skillet. tablespoons of olive oil. Lightly salt and pepper the pieces of fish and fry on both sides. Put the fish from the pan on a paper towel to drain off excess fat.
  3. Wash and peel the eggplants. Then cut lengthwise into slices. Heat the remaining olive oil and fry the eggplants in portions until golden brown. From the pan, spread them on a paper towel to absorb the fat.
  4. Wash the tomatoes and cut into circles. On each slice of eggplant, put a slice of fish fillet and a slice of tomato. Roll up the rolls and fasten them with wooden skewers.
  5. For the sauce, peel the garlic, pass through a press and add to the mayonnaise. Season with black pepper to taste. Pour the sauce over the rolls. Serve cold on lettuce leaves.
