Why you can't drink hot drinks. Is it good to drink hot water

There is no way to dispute the benefits of hot drinks like tea or coffee. They will help us to cheer up, relieve drowsiness, warm and simply allow us to enjoy the taste and aroma.

However, even the usual procedure of drinking tea for many of us has become almost a ritual, during which everything is important: the quality of the tea itself, and the quality of water, and the choice of dishes (its shape, size, materials), as well as the temperature of brewing an aromatic drink. The taste, aroma, and healing properties of the tea will directly depend on how hot the water you use to brew the tea will be.

How does the taste of a drink depend on its temperature?

It has long become a habit to pour boiling water over tea leaves. Moreover, the water itself can be brought to a boil several times before. First they put the kettle on, but there was not enough time, then they simply forgot that the water had already boiled. And as a result, we get a dubiously healthy and tasty drink.

But how, you argue, on each pack of tea is drawn how the tea leaves are poured with boiling water. However, this is only a schematic representation. The water should really be boiled, but not just boiled and still bubbling in the kettle.

Most teas should not be steeped in boiling water. Such tea will turn out to be bitter, tart, and sometimes even tasteless. This will be due to the fact that the catechins contained in tea, when brewed with water above 80 ° C, will give the drink all their bitterness. But this is true for quality tea. If you brew ordinary inexpensive tea, then there are minimal amounts of these substances and the water should be just hot enough to get the desired taste.

Therefore, brewing tea with water of the required temperature, you get not only a fragrant and tasty drink, but also benefit the body. After all, the incorrectly selected water temperature can provoke the appearance of chemical compounds that are not beneficial to health in the drink.

How to choose the right temperature for brewing tea

We already know that each type of tea requires its own brewing temperature. So fermented teas need high temperatures, and infusions from whole, unrolled leaves should be filled with less hot water. There is a regularity here: the denser the leaf is twisted, the higher the water temperature to brew it. And the less saturated the color of the tea leaf, the more delicate it is, the lower the water temperature must be for brewing it.

Thus, boiling water should be used to brew black tea, as well as fermented teas (fried and leafy pu-erh tea, oolong tea, and red tea).

The temperature of the water for brewing unfermented or partially fermented teas, which include flower and yellow teas, should be 85-95 ° C.

And unfermented green and white teas should be brewed with water heated to 70-85 ° C. By the way, it is usually these teas that most green tea lovers drink.

Why is boiling water dangerous?

According to statistics, the majority of patients with cancer of the esophagus and larynx, if we exclude smokers and alcohol abusers, are fans of very hot drinks.

Studies have shown that hot drinks, that is, drinks with temperatures exceeding 70 ° C, increase the risk of developing throat cancer. This is due to the fact that excessively hot liquid damages the epithelium of the mucous membrane of the throat, provoking the development of atypical cells. And in order to exclude the possibility of developing cancer of the throat and esophagus, you need to learn how to drink liquids with a temperature of no higher than 60 ° C.

In addition, as a result of an addiction to hot drinking, not only the throat and the esophagus, which has no nerve endings, and therefore will not allow you to feel that something is wrong with it, suffers, but also the tooth enamel, as well as the mucous membranes of the mouth.

Hot drinks and food weaken the local immunity, disrupting the functions of the upper respiratory tract, which can lead to chronic tonsillitis, sore throat and frequent coughing and sore throat.

Of course, by constantly burning the mucous membranes of the mouth, we will injure them and make them defenseless, increasing the likelihood of developing an infection in the oral cavity. Moreover, the habit of drinking and eating hot leads to a gradual failure of taste buds, which, as it is, gradually waste their functions with age.

Also, in defense of non-hot food, it is also said that hot food is absorbed faster by the body, and those who want to lose weight are still better off eating non-hot food, which will be absorbed more slowly. An exception is ice cream, which is not suitable for those who are losing weight.

There is a way out, you should not drink or eat boiling water. Let the drink (food) cool down, and if there is no way to wait, then you should drink in small sips and slowly. There is also a popular way to determine the optimal temperature of drinks that suits you. You just need to take a cup of tea (coffee, etc.) in your hands and if the temperature is acceptable for your hands, then the drink will not be too hot for you.

How to determine the temperature of the brewing water

If you do not have a kettle that can be programmed for a specific temperature of water heating, then try to determine the stage of boiling yourself. Although from the point of view of the Chinese there are 7 stages of water boiling, we will consider only the brightest of them.

The first stage of boiling water, called "fish eye", is the stage when the liquid begins to boil, when its temperature is approximately 70-80 ° C. At this stage, the water starts to make noise, and small bubbles rise from the bottom of the kettle.

The second stage of boiling water - "white key", got its name from the sharp change in color to white, which is caused by a large number of rising bubbles. And the second part of the name "key" is associated with the fact that the water is practically in full swing. This boiling stage can be called the noisiest and shortest. At the same time, the water heats up to 80-92 ° C. Regular teas (even tea bags) are best brewed with water at this temperature.

And the last stage, called "turbulent shafts", is the stage of active boiling of water, the temperature of which is approximately 100 ° C. It is very easy to recognize it by the active bubbling of almost all the water in the kettle.

If even now you do not remove the kettle from the fire, then bursting and splashing bubbles appear on the surface of the water. Such water is no longer suitable for brewing, it will be boiled over. And, of course, you shouldn't boil the boiled water again.

Remember that you should not brew tea or coffee with either boiled or unboiled water that has not reached the first stage of boiling.

An interesting fact is that you can also determine the stage of boiling water by its sound, which is most clearly heard in a samovar. So at the first stage, the sound of boiling will be quiet, muffled, at the second - similar to the noise of a bee swarm, and at the third it will grow and become lower.

But there is also an easier way to prepare water at the desired temperature, you just need to cool it down to the desired temperature. If you pour water from one cup to another, then about 5-10 ° C will be lost each time.

And of course, the most popular way to get rid of the bitterness characteristic of many varieties of tea is to lower the temperature of the water during brewing, even by only 5 ° C.

Secrets of hot drinks

As we have already determined, any hot drink can be spoiled by water, that is, by improperly brewing it. But, in addition, the quality of the water itself greatly affects the taste and health benefits of drinking. Therefore, if there is no certainty that it is of good quality, water from the water supply system should be passed through a filter or at least defended. The most suitable water can be considered from the source.

Also, the correctness of brewing can be determined already during the brewing process, by the "behavior" of the tea leaves, which will float at the right temperature, gradually sinking to the bottom of the cup or teapot. If the water is not hot enough, the tea leaves will remain on its surface. When the water is too hot, they will immediately fall down.

Another secret of good tea is the foam that appears at the very end of brewing, it should not be removed, it will testify to the correctness of your actions.

The benefits of hot alcoholic drinks

Here it is immediately worth making a reservation that even hot, with the addition of seasonings, fruits, juices, etc., alcohol remains alcohol, which means that one glass of mulled wine on a cold winter evening will be more beneficial than harmful if it remains one glass ...

The warming effect of alcohol is due to its ability to dilate blood vessels, improving blood circulation. And it is quite simple to calculate the permissible amount of alcohol.

So a woman can safely drink 20 ml of ethanol, and a man - 30 ml. So much alcohol will be in mulled wine without cognac (only wine) when the water is exactly half, that is, the strength should be about 5-6%. Simply put, a woman, observing all the rules for preparing a drink, can drink 400 ml of it, and a man - 600.

Spices, fruits, honey, juices will be a great addition to hot alcoholic drinks. They, like alcohol, will have a vasodilating effect and have other properties. Specifically, cinnamon has the ability to lower cholesterol levels by imparting a distinctive aroma and sweet taste to the drink. If you add ginger to the drink, you can speed up the metabolism, and this root will also have a calming effect. Benefits of cardamom in a positive effect on the digestive system. Fruits, especially citrus fruits, make the drink fortified, despite the fact that heating is not particularly conducive to this process. Do not forget that alcohol is very high in calories, especially if you drink it hot.

An international team of scientists studied the relationship between the habit of drinking very hot tea and the incidence of esophageal cancer.

Inhabitants of northern Iran took part in the experiment (after all, it is there that the incidence rate of this type of cancer is one of the highest on the globe). It turned out, when compared with drinking a warm drink, hot tea (about 66-70 degrees) doubled the risk of developing esophageal cancer. And very hot tea (70 degrees and more) - seven times. Despite this, doctors recommend starting drinking tea no earlier than 4 minutes after brewing it.

But it is known that many people prefer not only to drink hot drinks, but to eat hot dishes, without waiting for them to cool down a little. What happens in the body under such circumstances?

In conditions of consumption of too hot food and liquid in the body, many organs suffer, from the tongue to the rectum. The fact is that all organs of the digestive tract have a mucous membrane consisting of cells, and the cells contain protein. So, the protein withstands a maximum temperature of 42 degrees, if this figure is higher, the protein is denatured (cooked), the cell loses its functions. Therefore, the optimal temperature of the food and liquid that we consume is no more than 40 degrees.

If a person drinks tea almost immediately after brewing it, he has a temperature of 80-85 degrees. On contact with the mucous membrane, this liquid causes the death of cells that line the surface of the oral cavity. And if surface cells die, hot food causes burns to the lower tissues, we are talking about traumatizing the entire shell to the muscle layer.

Frequent consumption of hot foods causes the receptors to lose their ability to recognize temperature. As a result, a person ceases to feel that the food is too hot, there is a regular injury to the submucosal and muscle layers of the organs. And with regular repetition, cicatricial changes occur (like on the body after a wound).

Which organs are damaged?

Let's start with the tongue - because of frequent burns, taste buds suffer. As a result, a person may not feel the taste of food (may not even distinguish spoiled foods). Burns affect the larynx and the back of the pharynx, subsequently a dry cough develops (it is very difficult to get rid of it), a sore throat appears.

Hot food and liquid pass through the esophagus into the stomach. Therefore, there are not only burns of the esophagus, but also of the gastric mucosa, which leads to the appearance of burn ulcers (up to 5-6 cm in diameter). And the more often a person eats or drinks hot, the more chances of developing scar changes.

But that's not all, because even scars are injured by various harmful agents. Speech, in particular, about nicotine, carcinogens (found in overcooked fats), genetically modified foods, food additives and dyes, hormones (often found in meat).

This process becomes the cause of abnormal cell division, which provokes a precancerous condition, and later the development of cancer.

In addition, with burns of the gastric mucosa, the death of cells that produce hydrochloric acid occurs (it, in particular, disinfects food). This can lead to a decrease in acidity, as well as to a violation of the microbial balance (after all, food enters the body with a large number of infectious agents, which, under such circumstances, are able to reproduce).

Does it matter what kind of food gets into the body when hot?

Of course, for example, hot dumplings or donuts pass through the esophagus more slowly, so they are more traumatic than liquid.

There are many cases where the health condition of the victims has deteriorated sharply as a result of the consumption of such food. Even young people, where there are enough defenses to resist, developed large (up to 6 centimeters) stomach ulcers with bleeding due to the consumption of too hot dumplings.

Often women burn their stomachs with hot cakes, which they savor immediately from the pan when they are fried. There were cases when there were several ulcers of 2-5 centimeters.

Therefore, take care of yourself, it is better to blow on the food again, wait until the drink cools down, than then treat the consequences.

It is customary to drink tea hot or cold. In an intermediate state, this drink loses its richness of taste and aroma. But it is necessary to withstand the temperature of the drink in order to protect yourself from diseases and banal burns.

Why hot tea is dangerous

Hot tea is considered the most popular morning drink in Asia and Latin America. It is no less popular in Europe, but here it is drunk with the addition of flavoring and aromatic ingredients.

Studies on the effect of the temperature of this drink on human health and well-being were carried out by several institutes more than 10 years ago. The studies involved 2 groups of volunteers. Some were absolutely healthy, others were sick with esophageal cancer. The research results confirmed the scientists' guesses.

Hot tea, the temperature of which fluctuates between 66-69 ° C, really increases the risk of developing oncology by 2 times. If the temperature is further increased by 10-15 ° C, the risk of developing a terrible disease increases by 6 points. It was about black and green tea, which can cause cancer if the esophagus and larynx are burned.

What else is dangerous about a hot drink? It is strictly forbidden to drink it for sore throats, especially sore throat. This additionally injures the already inflamed tissue, causing damage to the mucous membranes. The drink can cause fever, headache and severe discomfort.

Hot Lemon Drink Thinns and Destroys Tooth Enamel

It is harmful to drink hot tea in general for the mouth and teeth in particular. Despite the fact that teeth are considered the strongest bony parts of the human skeleton, they are very vulnerable. From temperature changes and too hot food and drinks, tooth enamel cracks, which is a provoking factor for the development of caries and other diseases.

A drink with lemon and hibiscus is especially dangerous. Both ingredients contain fruit acids, which aggressively affect tooth enamel and provoke its increased destruction and thinning. With inflammation of the gums and stomatitis, you should also not use scalding tea.

Europeans are accustomed to drinking more hot tea in the cold season, while Asians are used to drinking all year round, despite the unbearable heat.

At high air temperatures, drinking hot drinks increases sweating, as a result of which a person loses a lot of fluids. With insufficient intake, dehydration may occur. Therefore, in Turkey and other countries, it is customary to drink a glass of water after a cup of hot tea or coffee.

Hot tea is also contraindicated for pregnant women. It increases blood flow and can tone the uterus. However, with weakness and fatigue, it is such a drink that can raise vitality and restore vigor. During pregnancy accompanied by pressure surges, you should drink moderately warm sweet tea.

Tea, flu, hypertension

There are certain situations when a cup of hot drink is vital. This applies to hypertensive patients. For many people who are prone to the first symptoms of hypertension in the form of increased blood pressure, sweet black tea is the first medicine. This is true. A cup of tea with 2 teaspoons of sugar can really lower blood pressure and relieve vasospasm.

British scientists have proven that drinking a hot drink at least once a day reduces the risk of developing a heart attack by 40%. The drink stimulates blood circulation, breaks down cholesterol, thins the blood and prevents blood clots.

Green tea is also valuable for the body. It is the prevention of osteoporosis. It's all about the high content of antioxidants that protect bones from deformation and maintain a stable mineral balance in them. Hot green tea is much healthier than cold tea, as the concentration of antioxidants in the chilled drink decreases due to their interaction with other substances.

Milk lowers the temperature in the cup and makes the tea safer

With flu and other infections that are accompanied by an increase in body temperature, the use of hot drinks is prohibited due to the likelihood of stimulating a further uncontrolled increase in body temperature.

So, can you drink hot tea?

A few facts that speak against drinking hot tea:

  • the risk of getting a burn of the throat and esophagus with damage to the mucous membrane and the appearance of atypical cells increases;
  • provokes the development of chronic diseases of the throat (pharyngitis, tonsillitis);
  • taste buds lose sensitivity;
  • frequent damage to the mucous membrane is a favorable factor for the reproduction of microbes.

In the summer, the consumption of hot drinks is reduced, and in the winter, it is increased. This is understandable and logical, but so that tea is useful, does not cause a burn and does not become a provocateur of chronic diseases, it is drunk in moderation, at a comfortable temperature, avoiding too high a strength.

To prepare the right drink, pour hot water over the tea leaves and let it brew for 3-5 minutes. This time is enough to allow the liquid to cool down, acquire the correct taste and not lose the aroma. This is how tea is made in England.

What drink do we drink most often in cool weather? That's right: hot tea. It not only warms, but also gives a burst of energy, eliminates the first signs of a cold, invigorates. However, scientists warn that a hot drink can be very dangerous to health. If you regularly drink hot tea, the risk of developing esophageal cancer increases many times.

Previously, researchers pointed out mainly the healing properties of tea: tea leaves infusion contains polyphenols, antioxidants and other useful components. The drink is extremely popular all over the world. According to estimates of statistical services, in 2016 alone, about three million tons of tea leaves were sold in the world.

What have scientists discovered now? They, as before, support the moderate consumption of the drink, but only on the following condition: it should not be hot.
According to the results of research work carried out by employees of the University of Beijing, an increased risk of drinking hot tea was found - especially if such tea is consumed by a person who abuses smoking or alcohol.

According to the data provided by the World Cancer Research Foundation, malignant disease of the esophagus ranks eighth among the global incidence of cancer. The highest incidence rate is annually recorded among residents of China and the Central Asian region.
One of the authors of the work, Jun Liu, a representative of the Biostatistical and Epidemiological Department at the University of Beijing, points to a serious connection between drinking hot drinks and the development of cancer in the esophagus.

For a long time, Professor Liu studied the effect of high temperature on the appearance of a cancerous process in the esophagus. He was able to confirm that a number of irritating factors play a certain role in the malignant transformation of the cellular structures of the digestive tract. First of all, we are talking about alcohol, nicotine and high-temperature liquids. It turned out that a person who does not drink or smoke can periodically indulge in freshly brewed hot tea - the likelihood of negative consequences is minimal. However, a person who smokes and drinks alcohol, who at the same time likes to treat themselves to a hot drink, increases their risk of developing esophageal cancer many times over.

Specialists monitored the health of volunteers in the framework of the China Kadoorie Biobank project. Such a project was aimed at combining and evaluating information about various chronic pathologies in Chinese people. To ensure the accuracy of the data obtained, the experts did not preliminarily include in the list of patients with diagnosed oncological diseases, regardless of their location.

The final testing involved nearly 500,000 patients of different sex and age. Over the next 10 years, more than 1,700 participants were diagnosed with cancer in the esophagus.
The scientists calculated that the combination of smoking, drinking alcohol and hot tea increased the risk of developing cancer in the esophagus by 5 times. This trend was not found in people who drank tea, and at the same time led a healthy lifestyle.

Details of the study are described in the Annals of Internal Medicine, as well as on the website of the journal annals.org

When it comes to proper nutrition, we usually mean the healthiness and variety of dishes. At the same time, few people think about the temperature of the food they eat.

Of course, not too hot and not too cold food will be normal for the body, due to the fact that our mucous membrane and all organs are not adapted to very hot food, as well as very cold food. This is due to the fact that the epithelial tissue of organs begins to be affected, which can lead to irreversible processes, even to cancer, that is the danger of cold and hot food.

Most people like to drink cold drinks (juices with ice, cocktails), and almost no one ever refuses to drink ice cream. But fact is fact: ice cold drinks and cold foods lead to obesity. Back in 1969, Soviet radiologists established this fact, having carried out this experiment: patients were given barium porridge for an X-ray, but the porridge left the stomach faster than the radiologists had time to adjust the technique for the X-ray. On closer examination, it turned out that if you drink food with cold drinks (for example, ice water or Pepsi-Cola with ice), the time spent in the stomach of food is reduced from 4-5 hours to 20 minutes.

Thus, when eating cold food or cold drinks, normal digestion does not occur. This naturally leads to obesity. it is impossible to get enough of such food and the feeling of hunger comes faster. Such food enhances the processes of putrefaction in the intestines, thereby disrupting the healthy processes of assimilation and utilization of food.

In the stomach, proteins are prepared for further processing and assimilation.

Therefore, attention! If you drink any cold drink after a meal, then the protein part of the food will not be fully processed in the stomach, proteins will not be broken down into amino acids. The food lump will quickly leave the stomach, and the entire protein component will simply rot in the intestine (untreated protein at a temperature of 36.6 degrees starts to rot relatively quickly).

You will not only waste money on food, but instead of benefit, you will receive harm in the form of intestinal inflammatory diseases (colitis, enteritis) and dysbiosis.

This reaction of the body to cold drinks is widely used by fast food establishments. Have you ever wondered why there is always ice water on the table in such establishments? This is not at all to quench your thirst. After drinking ice cold water, you will begin to experience an increased feeling of hunger, which you will then quickly satisfy with fast food. As a result, this leads to disruption of the entire gastrointestinal tract, as well as weight gain.

Eating hot food is equally dangerous. This topic especially concerns those who like to drink very hot tea in large doses. All scientists say that hot food burns the esophagus, and in this case, severe lesions of the esophagus wall occur, the very depth of the lesion depends on the hot food consumed. With burns of the esophageal mucosa, necrosis of the mucous membrane occurs, as well as other layers of the esophageal membrane. Such phenomena lead to the development of edema of the tissues of the esophagus, and at the same time swallowing is impaired, but in the future the edema is significantly reduced, but the dead tissue begins to be rejected, which leads to the formation of ulcers, after their healing, stenosis or narrowing of the esophagus forms in the esophagus - this is the danger eating hot food.

Thus, we can conclude that the danger of eating hot and cold food is obvious, such food is harmful to health and you should eat only normal temperature.
