You can even make a lean version, and it will be no worse than usual. And baking in the oven or in a modern multicooker is a matter of individual preference.

Coffee cake with chocolate

The most delicious and at the same time simple recipe is chocolate-coffee cake. To prepare it you will need:

  • Flour - 2.5 tbsp.;
  • Cocoa powder - 3 tbsp. l .;
  • Coffee - 1 cup;
  • You will need 3 eggs;
  • We take margarine 100 g;
  • Baking powder - 1 tbsp. l .;
  • Salt - half a teaspoon;
  • Sugar - 1 glass;
  • Chocolate topping.

The amount of sugar can be adjusted depending on how sweet your pastry is.

Mix dry ingredients: flour, cocoa, salt, baking powder. Grind sugar with margarine and eggs. Mix everything with coffee, put in a mold. Place in an oven to bake. Pour the finished cake generously with topping or cover with chocolate icing.

Coffee pie with nuts

Coffee nut pie is best made with shortcrust pastry.

This will make it crumbly and crunchy:

  • Flour will need 2 glasses with a slide;
  • Egg yolks - 3 things;
  • We take 1 glass of sugar;
  • Margarine take the floor of a large pack;
  • Baking soda - on the tip of a knife;
  • Coffee will go 3 tsp. for 50 ml of water;

It can be cooked with fresh cherries or with the addition of jam:

  • Flour - take 2 cups;
  • Coffee - 1 cup;
  • We take baking powder 1 tsp;

  • Sugar will need 1 glass;

Leave to cook in Bake mode. Put fresh cherries on the cooled crust, crush everything with powdered sugar and pour over with sweet chocolate icing.

Coffee pie with oranges

You can also cook a delicious coffee cake with oranges in a multicooker, which has a pleasant taste and citrus aroma:

  • Egg whites - 4-5 pieces;
  • Powdered sugar requires 1 cup;
  • Flour - 2 glasses with a slide;
  • Cinnamon needs 2 tbsp. l .;
  • We take butter 100 g;
  • Fresh orange, cut into thin half rings;
  • Ground coffee - 2 tbsp. l .;

Try making apple cider dough in a slow cooker. It turns out to be a very interesting combination of flavors.

Components:

  • Flour needs 2 glasses;
  • Soda and salt in half a teaspoon;
  • Powdered sugar will need 100 g;
  • We take 1 cup of kefir;
  • Egg - 2 pieces;
  • Oil drain. - 100 g;
  • Coffee - 100 ml;
  • Apples to taste


Mix ingredients: flour, baking soda, salt. Rub butter with powder and eggs, pour in kefir and coffee.

Mix both compounds, then divide the resulting mixture in two.

Divide half into a mold, then spread the thinly sliced ​​apple wedges in several layers in a circle.

Cover the filling with the dough that remains on top and bake until all layers are ready.

The recipe can be improved if, 10 minutes before readiness, pour the egg whites whipped with sugar into the product and put it in the oven to brown for another 10 minutes.

Coffee cake with blueberries

This recipe can be used for more than just coffee dough. Components:

  • Flour - 2 tbsp.;
  • Sugar needs 1 tbsp. and 4 more tbsp. l .;
  • Baking soda - 1 tsp;
  • Margarine will need 200 g;
  • Eggs - 2 things;
  • Blueberries - 300 g;

Pie preparation starts with preparing the filling. Mash the blueberries with 4 tablespoons of sugar and let the juice drain.

Chop the rest of the dough on top. You can bake a pie both in the oven and in a slow cooker.

Coffee cake with prunes

Coffee is prepared on the basis of a liquid dough.

The cooking option is similar to the lean one, as it does not use animal products:

  • Flour will take 2 tbsp.;
  • Water - 1 tbsp.;
  • Coffee - 2-3 tsp;
  • Prunes (choose necessarily pitted) - 1 tbsp.;
  • Salt - half a teaspoon;
  • Baking soda - 1 tsp;
  • Sugar - 0.75 cups;

  • Salt - half a teaspoon;
  • Cinnamon will take 1 tsp;

  • flour - 250-300 grams;
  • instant coffee - 2 teaspoons with a slide (can be replaced with natural coffee);
  • sugar - 200 grams;
  • honey - 2 tablespoons without top;
  • soda - 1 teaspoon;
  • walnuts - 100 grams;
  • raisins or other dried fruits - 100 grams;
  • powdered sugar - 1 teaspoon;
  • salt - a pinch.

Lean coffee cake. Step by step recipe

  1. We brew coffee: add 2 heaping teaspoons of instant coffee to 250 grams of hot water and stir. Coffee can be replaced with natural coffee. According to the recipe, we need 250 milliliters of strong coffee, so keep in mind that if you brew ground coffee, some of it will settle.
  2. Pour brewed, still hot coffee into a bowl, add sugar, honey, salt, dissolve and leave to cool.
  3. Chop the nuts with a blender or chop them into small pieces with a knife.
  4. Combine nuts and dried fruits separately, add about a tablespoon of flour and mix. Sprinkling raisins and nuts with flour is done so that, during the baking process, they do not sink to the bottom of the cake.
  5. When the liquid cools down to room temperature, add soda to it (do not extinguish).
  6. Sift the flour and add small portions to the dough. Also, in parallel, pour in a mixture of nuts with raisins. Beat everything well with a whisk. In the process of kneading, you will see how the dough begins to foam gradually - this is all right (the soda reaction has gone), continue to add flour and mix well. As a result, the dough should be slightly thicker than for the pancakes.
  7. Leave the dough to rest for at least 20 minutes.
  8. Grease the baking dish with a thin layer of vegetable oil and sprinkle with flour.
  9. Pour the dough into it and bake in the oven for about 60-80 minutes at 180 degrees.   • butter - 100 g,
  • kefir - 1/2 cup,
  • eggs - 2 pcs.,
  • instant coffee - 3 teaspoons,
  • 1 teaspoon baking powder.

It will need softened, not harsh.)) For inspiration, you can connect several favorite tracks of a pleasant volume, or purr yourself in such actions. But let's start ...

Pour three teaspoons of instant coffee into a bowl, if it is granulated it is better to knead it into powder with a spoon, so it will dissolve faster. Next, pour half a glass of kefir and mix everything well and conscientiously.

In another bowl, actively beat the eggs with sugar until a light homogeneous foam - it is better and faster to do this with a mixer.

Putting everything together in one bowl. Add softened butter and a glass of flour, gradually pouring it through a sieve. Stir gently, slowly, from bottom to top. The dough is done.

We take out a form suitable for volume and pour our coffee dough into it.

We put in a heated oven and bake at 180 ° for 30-40 minutes. We check the readiness with a toothpick, if it is clean and dry, everything is in order.

Sprinkle icing sugar on top of the hot coffee cake. I decorate it using paper cut stencils, or, I confess in confidence, specially stored scraps from old patterned tulle curtains. It's very simple, but how beautiful!

This is a wonderful pastry for a weekend morning: a quick pie with a subtle coffee aroma, fluffy and light, like a fluff! Half an hour - and you can enjoy a slice of fragrant pie with the most delicious cup of morning coffee.

The recipe conquers with its simplicity, lightness and a minimal set of ingredients. Half a glass of fermented milk product, a couple of eggs, a piece of butter, sugar and flour can be found in every kitchen. Let's bake a coffee cake on kefir - and you will be fascinated by it too!

I liked this pie even more than coffee cupcakes or lean pie. And all because it looks like a coffee cloud: so fluffy! The secret here is kefir and a lot of baking powder. I would probably put even a little less next time: the finished cake is so tender that it is difficult to cut it: it crumbles.

Initially, the recipe contains kefir. I cooked with fermented milk sourdough 2.5% fat.

On a form 22 cm - on average; You can bake in either 20 cm or 24 cm, like mine. It's just that in a smaller form, the cake will bake a little longer and it will turn out higher, and in a larger one it will come out a little lower, but it will bake faster.

Ingredients:

  • 0.5 cups (100 ml) kefir;
  • 3 teaspoons of instant coffee;
  • 2 medium eggs;
  • 1 cup (180-200 g) sugar
  • 100 g butter;
  • 1 glass of flour (150 g, this is a 250 ml glass);
  • A bag of baking powder (I took 15 g, I think 12 g will be enough);
  • A pinch of salt.

For the cream, if you like:

  • 2 tablespoons of sour cream;
  • 2 tablespoons of sugar;
  • 2 teaspoons of coffee or chicory.

Who shouldn't have caffeine - I think that such a pie can be baked with the addition of chicory. This healthy drink has a color, taste, and aroma almost like coffee!

How to bake:

We take the oil out of the refrigerator in advance to soften. Or you can slightly heat it up in the microwave, cutting it into pieces (otherwise, it will start to melt at the edges, and remain cold in the middle). Only for a short time - 20 seconds, and at the lowest power.

We close the bottom of the form with a circle of parchment, slightly grease it with odorless vegetable oil. We turn on the oven to heat up to 180C.

Pour coffee into kefir and stir.

The grains dissolve, and amazingly beautiful patterns are obtained, reminiscent of either a plexus of intricate ornaments, or spiral swirls of galaxies.

And when you stir the coffee until the grains are completely dissolved, the kefir will become a stunningly beautiful coffee color! And it smells like!

We set aside the coffee kefir for now and beat the eggs with sugar.

We use a mixer; 1-2 minutes is enough to get a fluffy mass.

Pour kefir into the whipped mass and mix.

Now add soft butter and beat a little more with a mixer - until smooth.

Pour in flour mixed with baking powder and salt.

And mix. It turns out lush, rather thick - slowly, as if reluctantly, pouring dough. If you stir, then the traces from the spoon last for a long time, like this:

We spread the dough into a mold and level it.

We put in the oven and bake on the middle floor at 180C for about 30 minutes. Look at your oven: you may need 25 and 35 - you need to try the pie with a skewer. If it is dry, and the pie has risen and turned brown-golden, it is ready.

After slightly cooling the pie, open the form and move it onto the dish.

Cut off a piece and admire, inhaling the wonderful aroma of coffee and fresh pastries!

And it will be even tastier if you make a cake out of a pie. Prepare the cream by mixing sour cream with sugar and coffee. And grease the cake on top. You can cut and layer, but I did not, because the cake came out very tender and could crumble when cutting. And next time we will make a cake based on this recipe :)

  2. Form the bottom and sides of the future cake from the dough.

  5. Put the dessert in the oven again. The baking time of the cake is 50 minutes. The required temperature is 180 degrees.

Ingredients for the dough

  • chicken eggs - 5 pcs.;
  • sugar - 100 g;
  • milk - 70 ml.;
  • flour - 150 g;
  • instant coffee - 1 tbsp. l .;
  • salt - 0.5 tsp;
  • vanillin - 10 g.

For cream

  • fat sour cream 25% - 300 ml.;
  • icing sugar - 100 g;
  • gelatin - 5 g;
  • vanillin - 10 g;
  • warm boiled water - 100 ml.

Making a biscuit

  1. Dissolve coffee in hot milk. Cool to 25 degrees.
  2. Separate the whites from the yolks. Place them in two clean, dry bowls.
  3. Add 50 g of sugar, coffee and vanillin to the yolks. Beat at low speed. It is necessary that the sugar is completely dissolved.
  4. Stir constantly, add flour.
  5. Beat the whites with a mixer at high speed, gradually introducing the remaining sugar. You should get a white air mass that retains its shape, which does not flow out if the bowl is turned upside down.

Cream preparation

  1. Fill the gelatin with warm water. We leave for 30 minutes.
  2. We heat the swollen gelatin in a water bath until completely dissolved. Leave to cool.
  3. Beat the sour cream, vanillin and sugar well with a mixer.
  4. Gradually add gelatin, stirring continuously. The sour cream is ready to use.

We coat the layers of biscuit with sour cream. The top of the dessert, if desired, can be decorated with grated chocolate or ground nuts.

  • Instead of instant coffee, brewed cereal can be added to the dough, but it must first be filtered.
  • Coffee gives a delicious aroma, but hardly changes the color of the baked goods. If you want to get a pleasant coffee shade in addition to the smell, you can add a little cocoa to the dough.
